So, as it get’s colder all I need is a warming soup. And pumpkin soup is literally my all time fav combo. There are so many ways to cook a (pumpkin) soup – so many spices, ingredients, …
Here is a version, that is:
- very easy
- full of nutrients
- perfect for autumn/winter
- best to fight a cold
What you need (portion for one hungry soul or perfect for a date)
- One small pumpkin (ca. 400g)
- two-three carrota
- optional: two (sweet-)potatoes
- ginger, garlic
- 1 tsp salt
- 2 tbsp vegetable stock
- 2 tsp pumpkin spice by Hartkorn Gewürze
- 1 tsp curcuma
- 1 tsp cinnamon

Oh yes. It is suuuper easy. As soon as the water (with vegetable stock and salt) starts cooking, add your carrots. After five minutes, add all the other ingredients and boil everything for 15-20min. Of course, you can add coconut milk as well – it gets more creamy than. I love this!
After you mixed it, top your soup with everything you love and most important: Enjoy. xx
